Wine Braised Short Ribs

Ingredients
  1. 2 lbs of beef short ribs
  2. 3 tbs olive oil
  3. 1 large white onion
  4. 3 medium carrots
  5. 3 stalks of celery
  6. 4 cloves of garlic (use 8 if you're not making this with the garlic mashed potatoes)
  7. 1 bottle of red wine
  8. 2 quarts of beef stock
  9. 1 sprig thyme
  10. 1 sprig oregano
  11. 1 sprig rosemary
  12. 1 tbs salt
  13. 1 tsp cracked black pepper
  14. 3 bay leaves 
  15. 4 tbs butter 
Instructions
  • Take a large cast iron stockpot, I use this one which I love, this le cruset is also a great option. Put it on medium heat and add the oil, once it's hot add your short ribs and cook each side until brown. Remove them and set aside.
  • Chop the onion, celery, carrots, and garlic. Add the butter to the hot stockpot with the vegetables and bring to a simmer. Simmer for 5 minutes until the onions begin to soften. 
  • Add the short ribs back to the stockpot and add the red wine, beef stock, thyme, oregano, rosemary, salt, pepper, and bay leaves.
  • Bring everything to a boil then reduce to a simmer and cook for 2.5 hours. Check periodically to make sure everything is covered and add more beef stock if the water gets too low.
  • Serve the short ribs with the broth on top of my garlic mashed potatoes.

I’m definitely making this recipe!! It looks amazing! I’m just confused on why you didn’t add tomato paste like you did on TikTok?
