Vegetarian Tacos

Ingredients
  • 1/2 cup beans
  • 4 cups water
  • 1 can of chipotle chillies in adobo sauce
  • 3 cloves garlic
  • 2 bay leaves
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp salt
  • Canola oil
  • 3 corn tortillas
  • 1 cup shredded cheddar cheese
Ingredients
  1. Combine the beans, water, chilies and sauce, garlic, bay leave, chili powder, and salt in a pot and let simmer on low for about 4 hours until the beans are fully cooked. Add more water if it gets low. Smash the chilies with a spoon to release the juices.
  2. Spoon a little of the bean water into a pan and add some canola oil and heat to low. Add a corn tortilla to the pan and flip to coat both sides with flavor. Generously cover the tortillas in cheese and remove some beans from the pan with a slotted spoon and spoon over the cheese. Cook the taco on each side for about 2-3 minutes on medium to get it crispy. 
  3. Top with guacamole or pico de gallo and enjoy.
  4. If you want more tacos just scale the recipe accordingly
