InstaPot Chicken Birria Tacos

Ingredients
  • Half of a chicken
  • 3 Bay leaves
  • 1 can of chipotle peppers in adobo sauce 
  • 5 cloves of garlic
  • 1 tbs chili powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1 tsp onion powder
  • 1 pint of  chicken broth
  • 1 cup shredded cheddar cheese
  • canola oil
  • 5 corn tortillas 
  • Cilantro, lime wedges, and chopped onion to top 
Instructions 
  1. Add the chicken, bay leaves, peppers, garlic, chili powder, paprika, salt, chicken broth, and onion powder to an insta pot and cook on the Meat/Stew setting on high for 1:15.
  2. Pull the chicken out with tongs and shred in a bowl, it should fall apart.
  3. Dip the tortillas in the broth and put in a pan on medimum heat, add the cheese and shredded meat and cook on each side for 2 minutes until crispy. Top with lime, onions, and cilantro and enjoy!
