Crispy Fries with Garlic Aoili

Ingredients
Fries
  • 4 large white potatoes
  • 1 quart canola oil
  • Sea Salt
Aoli
  • ​1 head of garlic
  • 2 tbs olive oil
  • 1/3 cup mayonaise
  • 1 tbs lemon juice
  • 1/2 tsp chipotle powder
  • 1/4 tsp salt
Instructions:

  1. Pre-heat the oven to 400 degrees 
  2. Slice the clove of garlic in half and drizzle in olive oil
  3. Put the garlic in the garlic baker (linked below) and bake for 40 min 
  4. Squeeze out the garlic into a bowl and mash it up with a spoon
  5. Add the mayonaise, lemon juice, chipotle powder, and Salt
  6. Mix
Fries
  1. Slice potatoes into a fry shape
  2. Soak in water for 10 minutes
  3. Lay fries out on a baking tray and cook @ 400 for 15 min
  4. Rough up the fries with kitchen tongs, this helps them get extra crispy 
  5. On the stove put the oil on medium heat
  6. Add the fries to the oil, you want them to have enough room that they're not touching
  7. Periodically stirring, let them cook for about 10 min until they're brown and crispy
  8. Remove the fries from the oil and put them in a bowl lined with paper towels, toss them to remove the excess oil.
  9. Sprinkle with sea salt and serve with the aoili.
