Chicken Tacos with Pico de Gallo

Ingredients
  • 2 chicken breasts 
  • 3 tbs olive or canola oil
  • 1 tsp cumin
  • 2 tsp chili powder
  • 1 tsp chipotle chili powder
  • 1 tsp garlic powder
  • 3 corn tortillas (I use goya)
  • 1/2 a tomato
  • 1/2 an onion
  • 1/2 a jalapeño
  • 1 lime
  • 1 tsp salt
  • 3 tbs chopped cilantro
Instructions
  1. Chop the chicken into small pieces and add cumin, chili powder, chipotle, and garlic powder in a bowl and let marinate while you prepare the pico
  2. Chop the onions and tomato into small pieces
  3. Remove the seeds from the Jalapeño and finely dice, add to the onions and tomato
  4. Add the finely chopped cilantro and salt to the bowl with the onions and tomato
  5. Squeeze the juice from half of the lime into the bowl and mix till fully combines
  6. Heat the oil in a pan on medium low
  7. Add the marinated chicken to the pan and cook for about 8-10 minutes until fully cooked (no pink left).
  8. Remove the chicken from the pan and leave the seasoned oil
  9. Coat the tortilla in the oil mixture and add the chicken 
  10. Turn the heat up to high and cook each side of the taco until crispy, about 3 minutes
  11. Remove from the pan, let cool, add pico, top with lime juice and enjoy!

Saw this on tiktok going to give it a try since I LOVED birria tacos and since it's taco Tuesday. Hope it turns out good 🤞
