Carnitas Tacos with Pineapple Salsa and Avocado Crema

Pork Ingredients
- 1 can chipotle sauce
- 2 bay leaves
- 1 tsp cumin
- 1 tsp salt
- 1 pint chicken broth
- 1 pork shoulder
Instructions
  1. Combine all ingredients in an insta-pot and cook for 2 hours on high.
  2. Remove and shred
Avocado Salsa Ingredients
- 1 large avocado
- small handful of cilantro
- juice of 4 small limes, about 1/4 cup
- 1 tsp salt
Instructions
  1. Put everything in a blender and blend
Pineapple Salsa
- 1 cup chopped pineapple or mango
- 1/2 a white onion chopped
- 3 tbs of cilantro finely chopped 
- juice of 1 lime 
- 1/2 tsp salt
- pinch of chili powder
Instructions
  1. Combine everything in a small bowl
Assembly Instructions
  1. Warm up corn tortillas in a pan with a little oil, add some of the juice from the meat and put meat on top
  2. Put the salsa on top
  3. Top with avocado
